When we have leftover bananas I get excited for cookies. When I have leftover sourdough bread... It's French Toast time!
I originally created this to have a play around with using sourdough. I didn't have any normal white bread laying around (as I don't use it) and so this was the next best option... It's delicious!
WHAT YOU WILL NEED:
2-3 pieces of stale sourdough bread (I love M&S's best)
1 egg
1/2 cup coconut milk drink (My fav is Rude Health)
Pinch of cinnamon
1 tsp Coconut oil (to fry with)
Toppings of choice - My fav's are frozen raspberries, almond butter and maple syrup
METHOD:
Beat your cinnamon, egg and coconut milk together into a bowl big enough to fit in your bread
Add your bread to the mixture and allow to soak for a couple of minutes. Then turn it over and soak the other side for another couple of minutes.
Warm your coconut oil in the pan and fry your soaked bread. I like to cook for a minute or so on each side.
Once the toast is nice and golden, lay in on a piece of kitchen towel to absorb any excess oil.
Then plate up, drizzling with maple syrup, almond butter and your frozen berries.
Serve with a huge mug of Earl Grey Tea (or whatever is your fav).
